We've been working on the recipe for this cake for over 2 weeks now. My workplace is called 1 Caramel and we've been trying to create something that we can use as our signature cake, something with caramel as a main feature.

There were a lot of problems, lots of trial and error, and a lot of cake was thrown in the trash while we were experimenting but I'm proud to say that the final result is well worth it.

3 layers of vanilla sponge soaked with caramel syrup, a layer of sticky chocolate caramel toffee, layers of ginger bavaroise mousse and coated with a caramel glaze. Decorated with crunchy caramelized polenta tuiles, chocolate shards, gold brushed chocolate caramel ingots and silver dragées.

The ginger flavor is very subtle and goes surprisingly well with the slightly bitter taste of caramel.

The combination of ginger and caramel struck me as odd at first, but the more I think about it, the more I want to try it. I can imagine it took a good amount of trial and error to get those two flavors to mesh well.
