Created specially for the grand opening of my workplace "1 Caramel". We had to make taste portions of all our cakes and desserts for the guests.
This is a simplified version of my Caramel Ginger Cake. Vanilla sponge soaked with caramel syrup, a layer of sticky chocolate caramel toffee, a second layer of vanilla sponge and a layer of ginger bavaroise mousse. Coated with a caramel glaze. Decorated with crunchy caramelized polenta tuile, gold brushed chocolate caramel ingot and silver dragée. |
