Organic Daisy Cupcakes

Made these for a friend's birthday. She likes daisies and is pretty into the organic stuff.

The cupcakes come in 2 flavors, blueberry and strawberry. The blueberries are organic but the strawberries are not, mostly because the only organic strawberries I could find were all super huge and didn't fit on top of my cupcakes.

I used organic flour, eggs, raw unprocessed sugar, some really expensive imported French butter for the cupcake batter. Each cupcake also has a filling in the center made of low fat cream cheese, milk and natural honey. The top of each cupcake is then coated with homemade crumble before baking to give a nice crusty texture. The frosting is made with more of that expensive French butter.

Was a really interesting experience working with all these organic ingredients. They behave a little different from the regular stuff I'm used to so had to make some adjustments. Took me 3 tries to get the recipe right for this but I love the end result. Was really moist and... I dunno, just something about knowing that it uses all the good ingredients made it taste all the more yummy!
